Rankoshi, a town in Hokkaido where Mori No Brewery is located,
is characterized by its mountains, water, and dense forests.
Its name derives from the Ainu word Ranko-ushi, meaning
“a place abundant with katsura trees.”
Nestled within the Niseko mountain range,
the town is embraced by peaks such as Chisenupuri and the iconic Mount Yotei.
Snow that settles upon these mountains slowly melts,
filtering through the land over time to become pure underground streams.
These waters flow into the Shiribetsu River and onward to the Sea of Japan.
From this clear, life-giving water, Rankoshi’s prized rice, Nanatsuboshi, has grown,
nurtured over generations in this land of abundance.
At Mori No Brewery, sake is crafted in deep reverence
for the water and rice that sustain this land.
From this philosophy is born our Sparkling Sake.
It is not merely sake with bubbles,
but an expression of innovation—
a quiet yet resolute challenge to create new value while honoring tradition.
The brewery stands within a 3.6-hectare forest,
lush with trees that have grown for fifty to sixty years.
An encounter with this forest quietly shaped
the path of our sake-making.
To live here each day, to attend to the subtle,
moment-by-moment changes in nature -
all of this becomes the wellspring of the brewer’s inspiration.
To live in harmony with nature is to live with honesty toward oneself.
Guided by this belief, the brewery was built in close collaboration
with master woodworkers, architects, and artisans of timber,
with a deep respect for preserving the forest in its natural form.
Mature trees were carefully left standing,
while those nearing the end of their natural life were thoughtfully chosen.
Without heavy machinery, the timber was carried from the forest by horses,
following the traditional practice of horse logging.
The harvested wood is reborn as interior finishes and furniture,
continuing its life as part of the forest, in another form.
What Mori No Brewery seeks is more than the making of sake alone.
It is the nurturing of a living environment in which sake brewing can endure,
and be carried forward into the future.
We hope that the story born of this forest
will become a quiet seed of action for someone of the next generation.

shaped by the brewer’s philosophy and craft.
Here unfolds a yet-unexplored realm of sake,
one that quietly awakens all five senses.

Beyond the window, a forest unfolds— a quiet companion as one enters the world of Sparkling Sake.
Within the shop, trees felled in the course of building the brewery, and timber that had fulfilled its role in the forest, are given new life as counters and vessels, continuing their presence in another form.
Mori No Wa is a place where forest and people meet, cultivating a gentle circle of connection in which time slowly opens. Here, agricultural goods nurtured by the land of Rankoshi and works of the hand come together, as a story born of this place is quietly, patiently woven.
